Ingredients

  • 1 cup brown lentils
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium, finely chopped yellow onion
  • 2 minced garlic cloves
  • 8 ounces, finely chopped button mushrooms
  • 1 grated carrot
  • 2 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 cup rolled oats
  • 1 cup, shredded cheddar cheese
  • 1 large egg
  • 0.5 cup breadcrumbs

Directions

Step 1

Rinse the lentils under cold water and drain.

Step 2

In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes or until the lentils are tender. Drain any excess liquid and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until transparent, about 5 minutes.

Step 4

Add the garlic, mushrooms, and grated carrot to the skillet. Cook for another 5-7 minutes until the vegetables are softened.

Step 5

Stir in the soy sauce, smoked paprika, ground cumin, salt, and pepper. Cook for 2 more minutes, ensuring the vegetables are well-coated with the spices.

Step 6

In a large mixing bowl, combine the cooked lentils, vegetable mixture, rolled oats, shredded cheddar cheese, and egg. Mix well until all ingredients are fully incorporated.

Step 7

Shape the mixture into four equal-sized patties.

Step 8

Place the breadcrumbs on a plate and coat each patty evenly with the crumbs.

Step 9

Heat a non-stick skillet or grill over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and heated through.

Step 10

Serve the vegetarian cheesy beef patties hot with your choice of burger buns or over a fresh salad.
