Ingredients

  • 400 g can Chickpeas
  • 2 large Avocados
  • 200 g Cherry tomatoes
  • 1 medium Red onion
  • 2 Garlic cloves
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 150 g Shredded mozzarella cheese
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Drain and rinse the chickpeas thoroughly under cold running water and set them aside.

Step 3

Cut the avocados in half, remove the pit, and scoop out the flesh. Place the avocado flesh in a large mixing bowl and mash it slightly.
