Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 medium Carrot, grated
  • 1 medium Zucchini, grated
  • 1 medium Bell pepper, finely chopped
  • 3 large Eggs
  • 0.25 cups Milk
  • 2 cups Cheddar cheese, grated
  • 1.5 cups Breadcrumbs
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a standard loaf pan with olive oil or non-stick cooking spray.

Heat the olive oil in a large skillet over medium heat. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.

Add the grated carrot, zucchini, and chopped bell pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables have softened and the moisture has mostly evaporated. Remove from heat and let cool slightly.
