Ingredients

  • 1.5 cups Basmat rice
  • 3 cups Water
  • 2 tablespoons Olive oil
  • 1 Medium onion, chopped
  • 3 cloves Garlic, minced
  • 1 Bell peppers, chopped (any color)
  • 1 cup Canned black beans, drained and rinsed
  • 1 cup Fresh pineapple, diced
  • 1 cup Coconut milk
  • 3 Scallions, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground allspice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Lime, cut into wedges

Directions

Step 1

Rinse the Basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.

Step 2

In a large saucepan, bring 3 cups of water to a boil. Add the rinsed rice and 1 teaspoon of salt. Stir well, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed.

Step 3

Meanwhile, in a large pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.

Add the chopped bell peppers to the pan and cook for another 4 minutes until they start to soften.

Stir in the black beans, diced pineapple, coconut milk, ground cumin, and ground allspice. Mix well and let it simmer gently for 5 minutes.

Toss in the sliced scallions and chopped cilantro, and season with additional salt and black pepper to taste.
