  • 2 medium, peeled and diced potatoes
  • 1 cup, shredded cabbage
  • 6 cups vegetable broth
  • 1 whole bay leaf
  • 0.75 cup white rice
  • 1 can (15 ounces), drained and rinsed chickpeas
  • 1 teaspoon lemon zest
  • 0.25 cup, chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, diced carrots, and celery to the pot and sauté for about 5 minutes until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the diced potatoes and shredded cabbage, stirring to combine with the vegetables.

Pour in the vegetable broth and add the bay leaf to the pot.
