  • 1 small head green cabbage, chopped
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 6 cups vegetable broth
  • 1 large potato, diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Add the minced garlic and sauté for another 1-2 minutes until fragrant.
