Ingredients

  • 6 pieces Flour tortillas
  • 2 cups Cooked white or brown rice
  • 1.5 cups Black beans (cooked or canned, drained and rinsed)
  • 1 medium Bell pepper (any color, diced)
  • 1 medium Red onion (diced)
  • 1 cup Fresh corn kernels
  • 2 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Lime juice
  • 1 cup Shredded cheddar cheese (optional)
  • 0.5 cup Fresh cilantro (chopped, optional)
  • 1 large Avocado (sliced or diced)
  • 1 cup Salsa

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Sauté the diced red onion and bell pepper in the skillet for 4-5 minutes until softened.

Add the garlic, ground cumin, chili powder, and salt to the skillet. Stir well and cook for 1-2 minutes until fragrant.
