  • 300 grams burdock root
  • 1 large carrot
  • 1 medium onion
  • 2 cloves garlic

  • 2 medium potato
  • 1500 milliliters vegetable broth
  • 2 tablespoons soy sauce
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon sea salt
  • 2 tablespoons fresh parsley

Directions

Step 1

Start by thoroughly washing the burdock root under running water to remove any dirt. Peel it using a vegetable peeler, then cut it into thin julienne strips.

Step 2

Peel and slice the carrot into thin rounds. Peel and dice the onion. Mince the garlic cloves finely.

Step 3

Heat the olive oil in a large pot over medium heat. Add the sliced onion and minced garlic and sauté them for 3-4 minutes until the onion becomes translucent.

Add the julienned burdock root and carrot slices to the pot. Stir the vegetables to coat them with the oil and sauté for another 5 minutes.
