  • 1 15-ounce can Black beans
  • 2 cups Cooked white rice
  • 2 tablespoons Lime juice
  • 0.5 cup Fresh cilantro
  • 4 large Flour tortillas
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Sour cream
  • 1 Avocado, sliced

Directions

Step 1

Drain and rinse the jackfruit thoroughly. Use your hands to shred the jackfruit into smaller pieces that resemble pulled meat.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; cook until the onion is translucent, about 5 minutes.

Step 3

Stir in the jackfruit, smoked paprika, cumin, and chili powder. Cook for another 5 minutes, stirring occasionally.

Add soy sauce and vegetable broth to the skillet. Reduce heat to low and let the jackfruit simmer, covered, for 20-25 minutes until it absorbs most of the liquid and becomes tender.
