  • 10 large eggs
  • 1 cup milk

  • 4 cups baby spinach
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups frozen hash browns

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with non-stick spray or a little olive oil.

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Heat a large skillet over medium heat and add the olive oil. Sauté the diced onion and minced garlic for 2-3 minutes until fragrant and softened.

Add the diced red bell pepper and zucchini to the skillet and cook for 3-4 minutes until slightly tender.
