  • 3 chopped celery stalks
  • 4 crushed garlic cloves
  • 2 whole bay leaves
  • 4 sprigs fresh thyme
  • 5 sprigs parsley stems
  • 1 teaspoon black peppercorns
  • 1 teaspoon sea salt
  • 1 teaspoon ground turmeric
  • 0.5 cup dried mushrooms
  • 12 cups water

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat.

Step 2

Add the chopped onion, leeks, carrots, and celery. Sauté for about 8-10 minutes or until the vegetables are soft and lightly browned.

Add the crushed garlic to the pot and cook for an additional 1-2 minutes until fragrant.

Stir in the bay leaves, thyme, parsley stems, black peppercorns, sea salt, turmeric, and dried mushrooms.
