  • 2 medium carrots
  • 2 medium potatoes
  • 1 large yellow onion

  • 6 cups vegetable broth

  • 1 tablespoon sugar
  • 3 cloves, minced garlic
  • 2 tablespoons, chopped fresh dill
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons sour cream (optional, for serving)
  • 1 loaf bread (optional, for serving)

Directions

Step 1

Peel and grate the beets using a box grater or food processor, and set them aside.

Step 2

Peel and dice the carrots and potatoes into bite-sized pieces. Finely chop the onion.

Step 3

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes.
