Ingredients

  • 4 medium beets
  • 2 medium carrots
  • 2 medium potatoes
  • 2 cups white cabbage

  • 3 cloves garlic
  • 3 tablespoons tomato paste
  • 6 cups vegetable stock
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 0 sour cream (optional, for serving)

Directions

Step 1

Peel and grate the beets and carrots. Set aside.

Step 2

Peel and chop the potatoes into bite-sized cubes. Set aside.

Finely shred the cabbage and dice the onion. Mince the garlic.

In a large soup pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until soft and translucent, about 3-4 minutes.
