  • 24 pieces Wonton wrappers
  • 1 cup Shiitake mushrooms
  • 1 cup Firm tofu
  • 2 tablespoons Green onions
  • 0.5 cup Carrot
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 6 cups Vegetable broth
  • 2 cups Bok choy
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Finely chop the shiitake mushrooms, pressing them gently with paper towels to remove excess moisture.

Step 2

Crumble the tofu using a fork or your hands until it resembles fine crumbs.

Step 3

Grate the carrot and finely slice the green onions.

Step 4

Mince the garlic cloves and ginger.

Step 5

In a mixing bowl, combine the chopped mushrooms, crumbled tofu, grated carrot, sliced green onions, mined garlic and ginger, soy sauce, and sesame oil. Mix well to create the wonton filling.

Lay a wonton wrapper on a flat surface and add about 1 teaspoon of the filling into the center of the wrapper.
