Ingredients

  • 2 tablespoons vegetable oil
  • 2 large portobello mushroom caps
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cheddar cheese slices
  • 2 eggs
  • 1 cup baby spinach leaves
  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • 2 burger buns
  • 4 tomato slices
  • 4 red onion slices

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a skillet over medium heat.

Step 2

Season the portobello mushroom caps with salt and pepper. Place them gill side down in the skillet and cook for about 5 minutes. Turn them over, top with cheddar cheese slices, cover the skillet, and cook for another 5 minutes until the cheese is melty and the mushrooms are tender. Remove from the skillet and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the skillet. Crack eggs into the skillet and cook to your preferred doneness (sunny side up or over easy) for about 3-5 minutes. Season with salt and pepper. Set aside.
