Ingredients

  • 400 grams Canned chickpeas
  • 1 medium Red onion
  • 3 whole Garlic cloves
  • 20 grams Fresh parsley
  • 100 grams Feta cheese
  • 60 grams Breadcrumbs
  • 1 whole Egg
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Drain and rinse the canned chickpeas well under running water and then place them in a food processor.

Step 2

Peel and roughly chop the red onion and garlic cloves. Add them to the food processor with the chickpeas.

Step 3

Wash and chop the fresh parsley. Add it to the food processor along with the cumin, paprika, salt, and black pepper.

Step 4

Pulse the mixture in the food processor until it reaches a coarse consistency. Avoid over-processing to maintain some texture.

Step 5

Transfer the chickpea mixture to a large mixing bowl. Crumble the feta cheese and add it to the mixture.

Step 6

Add the breadcrumbs and crack the egg into the bowl. Mix everything thoroughly until well combined.

Using your hands, shape the mixture into oval patties, about the size of your palm. You should be able to make about 8 bifteki.

In a large skillet, heat the olive oil over medium heat. Add the patties in a single layer (work in batches if necessary).
