  • 1 can (16 oz) Refried beans
  • 1 cup Shredded cheddar cheese
  • 1 cup Sour cream
  • 1 cup Salsa
  • 0.5 cup Jalapeños (optional, sliced)

Directions

Step 1

Begin by cooking the brown rice. Rinse the rice under cold water to remove excess starch. In a medium saucepan, combine 1 cup of brown rice with 2 cups of water and 1 teaspoon of salt. Bring to a boil, reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender and all water is absorbed. Fluff with a fork and set aside.

While the rice is cooking, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the plant-based ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes.
