Ingredients

  • 300 grams plant-based beef chunks
  • 2 tablespoons canola oil
  • 1 piece medium onion, sliced
  • 3 pieces garlic cloves, minced
  • 2 pieces medium tomato, chopped
  • 4 cups water
  • 2 tablespoons tamarind paste
  • 1 medium eggplant, sliced
  • 1 piece radish, sliced
  • 200 grams green beans, cut into 2-inch pieces
  • 100 grams water spinach (kangkong) or spinach
  • 2 tablespoons fish sauce or vegetarian fish sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the canola oil in a large pot over medium heat.

Step 2

Add the sliced onions and minced garlic, sauté until the onions are translucent and aromatic.

Step 3

Stir in the chopped tomatoes and continue to cook until they are softened and start to release juice, about 5 minutes.

Step 4

Add the plant-based beef chunks into the pot. Sauté for another 3-4 minutes until they are lightly browned.

Step 5

Pour in 4 cups of water and bring to a boil.

Add the tamarind paste into the boiling broth, stir well to dissolve.

Add the sliced eggplant and radish. Cook for 8-10 minutes, or until the vegetables are almost tender.
