  • 4 Large flour tortillas
  • 1 cup Shredded cheddar cheese

  • 2 Green onion, chopped
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Cooked black beans
  • 0.5 cup Salsa
  • 0.5 cup Sour cream

Directions

Step 1

Heat one tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the diced red bell pepper and sauté for about 3 minutes until slightly softened.

Step 3

Stir in the plant-based beef crumbles, ground cumin, chili powder, salt, and black pepper. Cook for about 5 minutes until the crumbles are heated through and fragrant.

Add the cooked black beans and cook for another 2 minutes, stirring occasionally.

Remove the skillet from heat and set the mixture aside.

Heat the remaining one tablespoon of olive oil in a separate, clean skillet over medium heat.
