  • 2 cloves garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 optional jalapeño, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 cup salsa
  • 0.5 cup sour cream

Directions

Step 1

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Step 2

Add the diced red bell pepper, yellow onion, and minced garlic. Sauté for about 5 minutes, until the vegetables are softened.

Step 3

Add the plant-based ground beef to the skillet. Cook for another 5-7 minutes, breaking it apart and stirring until browned.

Step 4

Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 1-2 minutes to let the flavors meld.

Remove the filling from the skillet and set aside. Wipe the skillet clean with a paper towel.
