Ingredients

  • 1 cup Brown rice
  • 2 cups Water
  • 2 tablespoons Olive oil
  • 300 grams Plant-based beef
  • 1 large Yellow onion
  • 1 medium Carrot
  • 100 grams Spinach
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sugar
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 stalks Green onions
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear. Combine with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for about 30-35 minutes, or until tender. Remove from heat and let stand covered for 5 minutes.

Step 2

While the rice is cooking, prepare the vegetables. Slice the onion thinly. Peel and julienne the carrot. Mince the garlic and ginger. Chop the green onions, separating the white and green parts.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onion and carrot, and sauté for about 5 minutes until they begin to soften.

Add the minced garlic and ginger to the skillet. Cook for an additional 1-2 minutes until fragrant.

Add the spinach to the skillet and cook until just wilted, about 2 minutes.

To serve, divide the cooked rice among four bowls. Top with the vegetable and plant-based beef mixture.
