  • 1 tbsp Dark soy sauce
  • 2 tbsp Vegetarian oyster sauce
  • 1 tsp Sesame oil
  • 3 Garlic cloves, minced
  • 1 tsp Ginger, minced
  • 4 Scallions, chopped
  • 2 cups Bean sprouts
  • 1 Red bell pepper, thinly sliced
  • 1 Carrot, julienned
  • 2 tbsp Oil for frying
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 1 quant Cornstarch slurry (1 tsp cornstarch + 2 tbsp water)

Directions

Step 1

1. Prepare the rice noodles according to package instructions. Drain and set aside.

Step 2

2. In a small bowl, combine the soy sauce, dark soy sauce, vegetarian oyster sauce, and sesame oil. Stir well and set aside.

Step 3

3. Heat 1 tablespoon of oil in a large non-stick skillet or wok over medium-high heat. Add the vegetarian beef strips and stir-fry for 3-4 minutes until they begin to brown. Remove from the skillet and set aside.

Step 4

4. In the same skillet, add the remaining tablespoon of oil. Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.

Step 5

5. Add the scallions, red bell pepper, and carrot to the skillet. Stir-fry for 2-3 minutes until the vegetables start to soften.

Step 6

6. Return the vegetarian beef strips to the skillet and add the prepared sauce. Stir well to coat everything evenly.

Step 7

7. Add the drained rice noodles to the skillet, gently tossing them with the other ingredients. Be careful not to break the noodles.
