Prepare the ingredients by peeling and dicing the carrot, chopping the green bell pepper, red onion, and garlic cloves finely.
Slice the vegetarian beef strips into bite-sized pieces. Also slice the green onions thinly for garnish, separating the whites from the greens.
Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of canola oil.
Once the oil is hot, add the vegetarian beef strips. Stir-fry them until they are heated through and slightly crispy on the edges, about 4-5 minutes. Remove them from the pan and set aside.
In the same skillet, add the remaining canola oil, followed by the chopped garlic and red onion. Sauté until fragrant and the onion begins to soften, about 2 minutes.
Add the diced carrot and green bell pepper. Stir-fry for another 3 minutes until the vegetables start to soften.
