  • 6 cups vegetable broth

  • 2 cups, chopped bok choy
  • 1 cup, sliced shiitake mushrooms
  • 200 grams, cubed firm tofu
  • 2 sliced spring onions
  • 1 handful, chopped cilantro
  • 1 sliced red chili
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Soak the dried rice vermicelli noodles in warm water for 10 minutes, then drain and set aside.

Step 2

In a large pot, heat sesame oil over medium heat. Add the sliced ginger and minced garlic, sauté until fragrant, about 2 minutes.

Add the vegetable broth to the pot and bring it to a simmer.
