  • 8 pieces vegetarian sausages
  • 1000 grams potatoes, peeled and chopped
  • 60 grams butter
  • 125 milliliters milk
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 tablespoons all-purpose flour
  • 500 milliliters vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Start by peeling and chopping the potatoes into roughly 2-inch chunks.

Place the potatoes in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until the potatoes are tender when pierced with a fork.

While the potatoes are cooking, heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the vegetarian sausages and cook until golden brown on all sides, about 8-10 minutes. Remove from the pan and set aside.
