Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Sea salt
  • 8 slices Vegan bacon strips
  • 1 cup Vegan cheddar cheese
  • 1 cup Sour cream
  • 0.25 cup Chives
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Scrub the potatoes under running water and pat them dry with a paper towel.

Step 3

Pierce each potato several times with a fork to allow steam to escape during baking.

Step 4

Rub each potato with olive oil and sprinkle with sea salt.

Step 5

Place the potatoes directly on the oven rack and bake for about 50 minutes or until tender when pierced with a fork.

While the potatoes are baking, cook the vegan bacon in a skillet over medium heat until crispy, about 5 minutes. Remove and let cool, then chop into small pieces.
