Ingredients

  • 15 oz canned baked beans
  • 1 medium onion
  • 1 medium carrot
  • 2 garlic cloves
  • 1 cup rolled oats
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 tbsp soy sauce
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a standard 9x5-inch loaf pan or line it with parchment paper.

Step 2

Drain the canned baked beans slightly, leaving most of the sauce, and add them to a large mixing bowl. Mash the beans with a fork or potato masher until partially broken down but still chunky.

Step 3

Finely chop the onion, carrot, and garlic. Sauté them in a skillet over medium heat with a small amount of oil for 3-5 minutes or until softened. Allow to cool slightly before adding them to the mashed beans.

Step 4

Add the rolled oats, breadcrumbs, eggs, soy sauce, salt, black pepper, and paprika to the bean mixture. Mix thoroughly until the mixture is fully combined and holds together when pressed.

Step 5

Transfer the mixture into the prepared loaf pan, pressing it down evenly to form a compact, uniform loaf.

Step 6

In a small bowl, combine the ketchup, brown sugar, and apple cider vinegar to make the glaze. Spread the glaze evenly over the top of the loaf.

Step 7

Bake in the preheated oven for 50-60 minutes, or until the loaf is firm and the glaze is caramelized and slightly sticky.

Step 8

Let the meatloaf rest in the pan for 10-15 minutes to set before slicing and serving.

Step 9

Serve warm with your favorite sides, such as mashed potatoes or a crisp green salad.
