Ingredients

  • 6 large eggs
  • 0.25 cup milk
  • 4 vegetarian bacon strips
  • 0.5 cup shredded cheddar cheese
  • 1 cup baby spinach
  • 0.25 cup chopped onion
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Lightly grease a 12-cup muffin tin with cooking spray or olive oil.

Step 3

In a skillet over medium heat, add the olive oil and sauté the chopped onion for about 2-3 minutes until it starts to soften.

Step 4

Add the vegetarian bacon strips to the skillet and cook until they are crispy, about 4-5 minutes. Remove from heat and let cool slightly.

Step 5

Chop the cooked vegetarian bacon into small pieces.

Step 6

In a large mixing bowl, whisk together the eggs and milk until well combined.

Step 7

Add the chopped vegetarian bacon, shredded cheddar cheese, baby spinach, salt, and black pepper to the egg mixture. Stir until all ingredients are evenly distributed.

Step 8

Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.

Step 9

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are fully set and slightly golden on top.

Step 10

Allow the egg bites to cool in the muffin tin for a few minutes before removing them.

Step 11

Serve warm, or allow to cool completely before storing in an airtight container in the refrigerator for up to 3 days.
