Ingredients

  • 4 pieces large eggs
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 pieces vegetarian bacon strips
  • 3 pieces whole wheat tortillas
  • 1 cup fresh spinach leaves
  • 1 medium, sliced tomato
  • 1 medium avocado
  • 2 tablespoons olive oil
  • 0.5 cup shredded cheese (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 2

Heat one tablespoon of olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are softly scrambled and cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and cook the vegetarian bacon strips according to the package instructions until they are crispy. Remove and set aside.
