Ingredients

  • 2 unit English muffins
  • 4 slices Vegetarian bacon slices
  • 2 large Eggs
  • 2 slices Cheddar cheese
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Olive oil
  • 4 slices Sliced tomato
  • 1 cup Fresh spinach

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Slice the English muffins in half and lightly toast them in the toaster or oven until golden brown.

Step 3

In a medium-sized skillet over medium heat, add the olive oil. Once hot, add the vegetarian bacon slices and cook for 2-3 minutes on each side or until crispy. Remove from the skillet and set aside.

Step 4

In the same skillet over medium-low heat, melt 1 tablespoon of butter. Crack the eggs into the skillet and season with salt and pepper. Cook until the whites are set and yolks are to your liking. If preferred, you can flip the eggs to cook both sides.

Spread the remaining butter on the toasted English muffins.
