Ingredients

  • 2 pieces Vegetarian bacon strips
  • 1 piece Large egg
  • 1 piece English muffin
  • 1 slice Cheddar cheese slice
  • 1 tablespoon Unsalted butter
  • 1 dash Salt
  • 1 dash Black pepper
  • 1 teaspoon Vegetable oil

Directions

Step 1

Preheat a non-stick skillet over medium heat and add 1 teaspoon of vegetable oil.

Step 2

Place the vegetarian bacon strips in the skillet and cook for 3-4 minutes on each side until they are crispy. Remove and set aside.

Step 3

While the bacon is cooking, split the English muffin in half and toast it until golden brown.

Step 4

In the same skillet, lower the heat to medium-low, add a tablespoon of butter and crack the egg into the skillet.

Step 5

Cook the egg for about 2-3 minutes until the whites are set but the yolk is still runny, or to your desired doneness. Sprinkle with salt and pepper.

Step 6

Place a slice of cheese on top of the egg during the last minute of cooking to let it melt slightly.

Step 7

To assemble the sandwich, place the cooked egg with melted cheese on the bottom half of the toasted English muffin.

Step 8

Layer the cooked vegetarian bacon strips on top of the cheese and egg.

Step 9

Top with the other half of the English muffin, press gently, and serve immediately.
