  • 200 grams Texturized Vegetable Protein (soy chunks)
  • 2 tablespoons Coconut oil
  • 5 whole Shallots
  • 3 whole Garlic cloves
  • 6 whole Red chilies
  • 4 whole Bird's eye chilies
  • 1 teaspoon Turmeric
  • 1 inch Ginger
  • 2 whole Lemongrass stalks
  • 4 leaves Kaffir lime leaves
  • 1 large Tomato
  • 1 tablespoon Sweet soy sauce
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 250 ml Water
  • 1 tablespoon Lime juice
  • 2 tablespoons Coriander leaves

Directions

Step 1

Rinse the texturized vegetable protein under running water, then soak it in hot water for 10 minutes to soften. Drain and squeeze out excess water.

Step 2

In a blender, combine shallots, garlic, red chilies, bird's eye chilies, turmeric, and ginger. Blend into a smooth paste.

Step 3

Heat coconut oil in a large pan over medium heat. Add the spice paste and cook for 2-3 minutes until fragrant.

Step 4

Bruise the lemongrass stalks slightly with the back of a knife to release their flavor. Add to the pan along with the kaffir lime leaves.

Add the drained soy chunks to the pan and stir until they are well coated with the spice paste.
