Ingredients

  • 400 grams firm tofu
  • 4 tablespoons soy sauce
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 3 tablespoons vegetable oil
  • 1 medium onion
  • 4 garlic cloves
  • 1 inch piece ginger
  • 1 cinnamon stick
  • 1 star anise
  • 3 cloves
  • 1 cup water
  • 1 green bird’s eye chili
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tomato
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the firm tofu into 1-inch cubes and set aside.

Step 2

Peel and thinly slice the onion. Peel and mince the garlic cloves. Slice the ginger into thin strips.

Step 3

Heat the vegetable oil in a large pan or wok over medium heat.

Step 4

Add the sliced onion, minced garlic, and ginger strips to the pan. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

Add the cinnamon stick, star anise, and cloves to the pan. Stir them in for another minute.

Increase the heat to medium-high and add the tofu cubes to the pan. Fry the tofu, occasionally stirring, until they are golden brown on all sides, about 5-7 minutes.

Pour in the soy sauce and sweet soy sauce (kecap manis), stirring well to coat the tofu.

Add the water to the pan, followed by the green bird’s eye chili (leave it whole if you want less heat), diced red and green bell peppers, and chopped tomato. Stir well.

Allow the mixture to simmer and thicken, uncovering for about 10-12 minutes, stirring occasionally until the sauce reduces and coats the tofu and vegetables.

Once done, taste and adjust the seasoning if necessary. Discard the cinnamon stick and star anise before serving.
