  • 0.5 teaspoon salt

Directions

Step 1

Start by soaking the dried shiitake mushrooms in warm water for about 20 minutes until they are rehydrated. Once done, squeeze out the excess water, remove the stems, and thinly slice the mushroom caps.

While the mushrooms soak, dice the extra-firm tofu into small cubes and thinly slice the carrot and green onions.
