  • 2 heads baby bok choy, chopped
  • 6 cups vegetable broth
  • 3 tablespoons soy sauce
  • 200 grams rice noodles
  • 1 cup spinach leaves
  • 2 stalks green onions, sliced
  • 0.25 cup fresh cilantro, chopped
  • 1 whole lime, cut into wedges
  • 1 whole red chili, sliced (optional)

Directions

Step 1

Heat sesame oil in a large pot over medium heat.

Step 2

Add minced garlic, grated ginger, and sliced onion. Sauté until the onion becomes translucent, about 3-4 minutes.

Add the julienned carrot and sliced mushrooms to the pot. Cook for another 3 minutes, stirring occasionally.
