Ingredients

  • 2 cups Jasmine rice
  • 4 cups Water
  • 3 tablespoons Vegetable oil
  • 1 medium Onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 medium Carrot, diced
  • 1 medium Bell pepper, diced (any color)
  • 1 cup Frozen peas
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 3 stalks Green onions, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 1 whole Lime, cut into wedges
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Rinse the Jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the rice is tender. Set aside to cool slightly.

Step 2

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until translucent.

Step 3

Add the minced garlic and diced carrot to the skillet. Stir-fry for another 2 minutes until the carrot starts to soften.

Step 4

Add the diced bell pepper and frozen peas to the pan. Cook for 3-4 minutes, stirring frequently, until the vegetables are cooked through but still crisp.

Push the vegetables to the side of the skillet and add the remaining tablespoon of vegetable oil. Add the cooled rice to the skillet, breaking up any clumps with a spatula.
