In a large bowl, combine the precooked cornmeal, water, and salt. Mix together until a dough forms. If the mixture is too dry, add more water a tablespoon at a time.
Divide the dough into 8 equal portions and shape each into a ball. Flatten each ball into a disc about 1/2 inch thick.
Heat a skillet over medium heat and lightly grease it with vegetable oil. Cook the arepas for about 5-7 minutes on each side until they develop a crispy, golden-brown crust. Set them aside.
Drain and rinse the canned jackfruit. Pat it dry with paper towels.
In the same skillet, heat the remaining vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened, about 5 minutes.
Stir in the tomato paste, cumin, and smoked paprika. Cook for another minute until the spices are fragrant.
Add the jackfruit to the skillet, breaking it apart with a fork until it resembles the texture of shredded meat. Stir in the soy sauce.
Cook the jackfruit mixture for about 10-15 minutes, stirring occasionally, until it is tender and warmed through.
To assemble the arepas, slice each arepa open horizontally. Fill with a generous portion of shredded jackfruit, sliced avocado, and a sprinkle of fresh cilantro.
Serve with lime wedges on the side for an added burst of flavor.
