  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper
  • 2 cups kale or spinach, roughly chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice (freshly squeezed)
  • 0.25 cup chopped roasted peanuts (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 3-4 minutes, until soft and translucent.
