  • 1 can (15 oz), drained and rinsed Chickpeas
  • 1 cup Fine bulgur
  • 1.5 cups Boiling water
  • 1 small, finely chopped Red onion
  • 3 cloves, minced Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 0.5 cup, chopped Fresh parsley
  • 0.25 cup, chopped Fresh mint
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Red pepper flakes
  • 2 tablespoons Tomato paste
  • 4 pieces Pita bread

Directions

Step 1

Combine the fine bulgur and boiling water in a bowl. Cover and let it sit for 15 minutes until the bulgur is softened.

In a food processor, add the drained chickpeas, softened bulgur, chopped red onion, minced garlic, cumin, paprika, black pepper, salt, chopped parsley, and mint.
