Ingredients

  • 2 pieces Flatbreads
  • 200 grams Vegetarian chicken strips
  • 2 tablespoons Olive oil
  • 100 grams Mozzarella cheese
  • 100 grams Cheddar cheese
  • 50 grams Parmesan cheese
  • 1 small Red onion
  • 1 medium Red bell pepper
  • 100 grams Spinach leaves
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Slice the red onion thinly and cut the red bell pepper into strips.

Step 3

In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the red onion and red bell pepper. Sauté for 5-7 minutes until softened.

Step 4

Add the vegetarian chicken strips to the skillet along with garlic powder, dried oregano, salt, and black pepper. Cook for another 5 minutes until the vegetarian chicken is heated through. Remove from heat.

Step 5

Place the flatbreads on a baking sheet. Brush each with the remaining 1 tablespoon of olive oil.

Step 6

Evenly distribute the cooked vegetable and vegetarian chicken mixture over the two flatbreads.

Step 7

Sprinkle mozzarella, cheddar, and parmesan cheeses over the top of the loaded flatbreads.

Step 8

Add fresh spinach leaves evenly on top of the cheese layer.

Bake in the preheated oven for 10 minutes or until the cheeses are melted and bubbly and the edges of the flatbread are crisp.

Remove from the oven and let cool for a couple of minutes before slicing and serving.
