Ingredients

  • 200 grams carrots
  • 150 grams pearl onions
  • 200 grams zucchini
  • 1 small fennel bulb
  • 2 cloves garlic cloves
  • 150 ml dry white wine
  • 150 ml water
  • 2 tablespoons olive oil
  • 1 whole lemon
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1 whole bay leaf
  • 2 sprigs thyme
  • 2 sprigs parsley
  • 5 whole black peppercorns
  • 1 teaspoon salt

Directions

Step 1

Peel the carrots and slice them diagonally into 1/4-inch thick discs. Trim and peel the pearl onions. Slice the zucchini into thick rounds. Trim and thinly slice the fennel bulb.

Step 2

Smash the garlic cloves and set aside.

Step 3

In a large saucepan, combine the dry white wine, water, olive oil, zest and juice of the lemon, white wine vinegar, sugar, bay leaf, thyme, parsley, peppercorns, and salt.

Bring the mixture to a gentle boil over medium heat, then reduce to a simmer.

Step 5

Add the carrots and pearl onions to the pan first and simmer for 5 minutes.

Step 6

Next, add the zucchini and fennel, and continue to simmer for another 10 minutes, or until all the vegetables are tender but not mushy.

Remove the saucepan from heat and let the vegetables cool in the broth to allow the flavors to meld.

Once cooled, use a slotted spoon to transfer the vegetables to a serving dish. Strain the poaching liquid and drizzle some over the vegetables.
