  • 1 cup green beans, trimmed and chopped
  • 2 medium potatoes, peeled and cubed
  • 1 medium zucchini, diced
  • 14 ounces canned diced tomatoes
  • 6 cups vegetable broth
  • 1 whole bay leaf
  • 2 sprigs fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons parsley, chopped for garnish

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Add the finely chopped onion and cook until softened, about 3-4 minutes.

Stir in the minced garlic and cook for another minute, taking care not to burn it.
