Ingredients

  • 200 grams thin rice noodles
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 large carrot, julienned
  • 1 medium red bell pepper, sliced thinly
  • 200 grams broccoli florets
  • 100 grams snap peas
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 lime, juiced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Directions

Step 1

Bring a pot of water to boil. Add the rice noodles and cook according to package instructions, usually about 4-5 minutes. Drain and rinse under cold water to prevent sticking. Set aside.

Step 2

In a large pan or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Add the julienned carrot, red bell pepper slices, and broccoli florets to the pan. Stir-fry for 4-5 minutes, or until the vegetables start to soften but are still crisp.
