  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 medium Potatoes, diced
  • 2 medium Carrots, sliced
  • 1 cup Green beans, chopped
  • 1 cup Cauliflower florets
  • 0.5 cup Peas, fresh or frozen
  • 1.5 cups Coconut milk
  • 2 tablespoons Fresh cilantro, chopped
  • 1 cup Water

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat.

Step 2

Add the cumin seeds and bay leaves, and sauté until the cumin seeds start to splutter, about 30 seconds.

Add the chopped onions and cook until golden brown, about 5-7 minutes.

Stir in the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.
