  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups baby spinach
  • 0.5 cup, fresh, chopped sweet basil leaves
  • 0.25 cup, grated (optional) parmesan cheese
  • 1 tablespoon lemon juice

Directions

Step 1

Heat olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion and sauté until translucent, about 4-5 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.
