  • 2 medium Carrot
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 1 cup Purple cabbage
  • 0.5 cup Fresh cilantro
  • 0.5 cup Fresh mint leaves
  • 1 cup Cooked vermicelli noodles
  • 2 tablespoons Soy sauce
  • 2 tablespoons Peanut butter
  • 1 tablespoon Hoison sauce
  • 1 teaspoon Rice vinegar
  • 2 tablespoons Water
  • 2 tablespoons Chopped peanuts

Directions

Step 1

Prepare the vegetables by julienning the carrots, cucumber, and red bell pepper into thin matchstick-sized slices.

Step 2

Finely slice the purple cabbage into thin strips.

Step 3

Wash and pat dry the cilantro and mint leaves.

Step 4

In a bowl of warm water, soak one rice paper wrapper at a time for about 10-15 seconds until it softens and becomes pliable.

Lay the softened rice paper on a clean, damp kitchen towel or cutting board.
