Ingredients

  • 2 medium zucchini
  • 2 medium carrots
  • 1 medium yellow squash
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • 4 links turkey sausage links
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 cups parmesan cheese
  • 2 tablespoons fresh parsley (optional)

Directions

Step 1

Wash and dry the zucchini, carrots, and yellow squash, then use a vegetable peeler to slice them into thin ribbons.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Slice the turkey sausage links into rounds and add them to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the sausages from the skillet and set them aside.

Step 5

In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until fragrant.

Step 6

Add the vegetable ribbons to the skillet and toss gently to coat them in the garlic and oil. Cook for 3-5 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Step 7

Season the vegetable ribbons with salt and black pepper to taste.

Step 8

Return the cooked turkey sausage to the skillet and toss everything together gently to combine. Cook for another 2-3 minutes until heated through.

Step 9

Transfer the mixture to serving plates and sprinkle with grated parmesan cheese and fresh parsley, if desired.

Step 10

Serve warm and enjoy your delicious Vegetable Ribbons with Turkey Sausage!
