Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 1 cup Frozen peas
  • 8 ounces Mushrooms, sliced
  • 2 cups Vegetable broth
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Fresh thyme, chopped
  • 1 package Pie crust dough
  • 1 large Egg, beaten

Directions

Step 1

Peel and dice the potatoes. Bring a pot of salted water to a boil, add the potatoes, and cook until fork-tender, approximately 15 minutes.

Step 2

Drain the potatoes and mash them with butter, milk, 1/2 teaspoon of salt, and black pepper until smooth. Set aside.

Preheat the oven to 375°F (190°C).
