Ingredients

  • 8 sheets phyllo pastry sheets
  • 4 tablespoons olive oil
  • 1 medium (finely diced) red bell pepper
  • 1 small (finely diced) zucchini
  • 1 medium (grated) carrot
  • 2 stalks (thinly sliced) scallions
  • 0.5 cup (crumbled) feta cheese
  • 2 cloves (minced) garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 2 tablespoons sesame seeds

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.

Step 2

Place a sheet of phyllo pastry on a clean work surface. Brush lightly with olive oil and layer another phyllo sheet on top. Repeat this process until all 8 sheets are stacked, brushing each layer with olive oil.

Step 3

Using a sharp knife or pizza cutter, cut the stacked phyllo sheets into small rectangles or squares, about 2x3 inches in size. Carefully transfer them to the prepared baking sheet.

Step 4

In a medium bowl, combine the red bell pepper, zucchini, carrot, scallions, feta cheese, garlic, salt, black pepper, and dried oregano. Mix well to evenly combine.
