Ingredients

  • 4 slices Whole wheat bread slices
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1 cup Spinach leaves
  • 4 slices Mozzarella cheese
  • 1 tablespoon Olive oil
  • 2 tablespoons Basil pesto
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a grill pan or panini press to medium heat.

Step 2

Wash and slice the zucchini into thin rounds. Core the red bell pepper and cut into thin strips.

Step 3

Heat olive oil in a skillet over medium heat. Add the zucchini and red bell pepper, and sauté for 5-7 minutes until tender. Sprinkle with salt and black pepper while cooking.

Step 4

Spread 1 tablespoon of basil pesto evenly on one side of two bread slices.

Step 5

Layer 1/2 cup spinach leaves, half the cooked zucchini and red bell pepper, and 2 slices of mozzarella cheese on top of the pesto-spread bread slice.

Top each sandwich with another slice of bread to cover the filling.

Step 7

Lightly grease the grill pan or panini press with a little olive oil if necessary. Place the sandwiches on the grill pan and press down firmly with a spatula or close the panini press.
